Vegan Chocolate Chip Gingerbread
Raise your hand if you think gingerbread shouldn’t just be a Christmas-time thing!!
Ingredients
- 3 flax eggs (3 Tbsp ground flax seeds + 6 Tbsp water; let sit 3 mins)
 - 1/3 cup molasses
 - 1/3 cup coconut sugar
 - 1 ½ cups almond flour
 - ½ cup tapioca flour
 - 2 Tbsp coconut flour
 - 2 Tbsp melted coconut oil
 - 2 tsp cinnamon
 - 1 tsp ground ginger
 - ½ tsp baking soda
 - ¼ tsp salt
 - ¼ tsp pure vanilla extract
 - Pinch of nutmeg
 - ½ cup chocolate chips
 
Instructions
- Preheat oven to 350°F and grease an 8x8 inch baking dish, or line with parchment paper.
 - In a large bowl, mix together all ingredients, except chocolate chips.
 - Fold in chocolate chips and pour into baking dish.
 - Bake for 40-45 minutes, or until a toothpick comes out clean.
