Vegan Chocolate Chip Gingerbread

Raise your hand if you think gingerbread shouldn’t just be a Christmas-time thing!!

Ingredients

  • 3 flax eggs (3 Tbsp ground flax seeds + 6 Tbsp water; let sit 3 mins)
  • 1/3 cup molasses
  • 1/3 cup coconut sugar
  • 1 ½ cups almond flour
  • ½ cup tapioca flour
  • 2 Tbsp coconut flour
  • 2 Tbsp melted coconut oil
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ tsp pure vanilla extract
  • Pinch of nutmeg
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 350°F and grease an 8x8 inch baking dish, or line with parchment paper.
  2. In a large bowl, mix together all ingredients, except chocolate chips.
  3. Fold in chocolate chips and pour into baking dish.
  4. Bake for 40-45 minutes, or until a toothpick comes out clean.
  5. Enjoy!
