Berry Crumb Bars

The perfect way to fuel my berry obsession is with these Berry Crumb Bars. Perfect for a quick treat to have around when you’re craving something sweet!

Ingredients

Shortbread:
  • 1 ¾ cup almond flour
  • 2 Tbsp coconut flour
  • ¼ cup melted coconut oil
  • 4 Tbsp maple syrup
  • 1/8 tsp salt
Berry Jam:
  • 1 ¼ cup frozen mixed berries (I used blackberries, blueberries, raspberries, and strawberries)
  • 2 Tbsp maple syrup
  • ¼ cup water

Instructions

  1. Preheat oven to 350°F and grease an 8x8 inch baking dish, or line with parchment paper.
  2. In a medium bowl, thoroughly mix together all shortbread ingredients.
  3. Press ¾ of the shortbread mixture into the bottom of the baking dish and bake for 5 minutes.
  4. While the shortbread is baking, combine berry jam ingredients in a small saucepan. Let the jam simmer over medium heat for 10 minutes, stirring occasionally. Then, transfer to a blender.
  5. Pulse the blender a couple times until the jam reaches your desired consistency.
  6. Spread the jam over the baked shortbread layer and crumble the remaining shortbread over the top.
  7. Bake for 15-20 minutes, or until golden.
  8. Let cool, slice into bars, and enjoy!

They are very easy to make, and are paleo, vegan, gluten free, dairy free, and refined sugar free.
