Berry Crumb Bars
The perfect way to fuel my berry obsession is with these Berry Crumb Bars. Perfect for a quick treat to have around when you’re craving something sweet!
Ingredients
Shortbread:
- 1 ¾ cup almond flour
- 2 Tbsp coconut flour
- ¼ cup melted coconut oil
- 4 Tbsp maple syrup
- 1/8 tsp salt
Berry Jam:
- 1 ¼ cup frozen mixed berries (I used blackberries, blueberries, raspberries, and strawberries)
- 2 Tbsp maple syrup
- ¼ cup water
Instructions
- Preheat oven to 350°F and grease an 8x8 inch baking dish, or line with parchment paper.
- In a medium bowl, thoroughly mix together all shortbread ingredients.
- Press ¾ of the shortbread mixture into the bottom of the baking dish and bake for 5 minutes.
- While the shortbread is baking, combine berry jam ingredients in a small saucepan. Let the jam simmer over medium heat for 10 minutes, stirring occasionally. Then, transfer to a blender.
- Pulse the blender a couple times until the jam reaches your desired consistency.
- Spread the jam over the baked shortbread layer and crumble the remaining shortbread over the top.
- Bake for 15-20 minutes, or until golden.
- Let cool, slice into bars, and enjoy!
They are very easy to make, and are paleo, vegan, gluten free, dairy free, and refined sugar free.
