Turkey Squash Stew
This Turkey Squash Stew is one of my all-time favorite meals to prep. I make a large batch and freeze it in single servings to pull out whenever I’m craving a filling comfort meal.
Ingredients
- 1 Tbsp coconut oil
- 4 sticks celery, diced
- 2 large carrots, diced
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 5 cups cubed butternut squash
- 6 cups broth of choice
- 2 lbs cooked ground turkey
- 2 cups pasta of choice (I use Jovial cassava pasta to keep AIP & paleo)
- 4 cups kale
Instructions
- In a large pot over medium heat, add coconut oil, celery, carrots, Italian seasoning, and salt. Cook for 5 minutes, stirring occasionally.
- Add butternut squash and broth. Mix to combine, cover, and bring to a boil. Let cook for 20 minutes.
- Add ground turkey and pasta. Cook for two minutes less than what the directions on your pasta box suggests.
- Shut the heat off and stir in kale. Serve once kale has wilted.
