Turkey Squash Stew

This Turkey Squash Stew is one of my all-time favorite meals to prep. I make a large batch and freeze it in single servings to pull out whenever I’m craving a filling comfort meal.

Ingredients

  • 1 Tbsp coconut oil
  • 4 sticks celery, diced
  • 2 large carrots, diced
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • 5 cups cubed butternut squash
  • 6 cups broth of choice
  • 2 lbs cooked ground turkey
  • 2 cups pasta of choice (I use Jovial cassava pasta to keep AIP & paleo)
  • 4 cups kale

Instructions

  1. In a large pot over medium heat, add coconut oil, celery, carrots, Italian seasoning, and salt. Cook for 5 minutes, stirring occasionally.
  2. Add butternut squash and broth. Mix to combine, cover, and bring to a boil. Let cook for 20 minutes.
  3. Add ground turkey and pasta. Cook for two minutes less than what the directions on your pasta box suggests.
  4. Shut the heat off and stir in kale. Serve once kale has wilted.
  5. Enjoy!
