Who says you have to give up pasta salad when eating paleo? This easy Paleo Pasta Salad is a summer staple.

Ingredients

  • 8 oz box Jovial penne cassava pasta, cooked
  • 1 cup diced cherry tomatoes
  • 6 oz can green olives, drained and halved
  • ¼ cup diced yellow onion
  • ¼ cup olive oil
  • 2 Tbsp apple cider vinegar
  • ½ Tbsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp garlic powder

Instructions

  1. In a large bowl, combine pasta, tomatoes, olives, and onion.
  2. n a small jar, combine all remaining ingredients. Shake until fully blended.
  3. Pour onto pasta and mix until fully incorporated.
  4. Enjoy!
