Stuffed Delicata Squash

Stuffed Delicata Squash

This Stuffed Delicata Squash is one of my favorite Fall dinners. A warm comfort meal that is filling and flavorful - it doesn’t get much better than that!

Ingredients

  • Coconut oil, as needed
  • 2 medium delicata squash
  • 1 medium yellow onion, diced
  • 1 lb ground turkey
  • 16 oz bag frozen cauliflower rice
  • 2 cloves minced garlic
  • 1 Tbsp fresh rosemary, chopped
  • ½ tsp salt

Instructions

  1. Preheat oven to 400°F and grease a cookie sheet, or line with parchment paper.
  2. Slice delicata squash lengthwise, scoop out seeds, and coat inside with coconut oil. Place face down on cookie sheet and bake for 30 minutes, or until a fork can poke through them easily.
  3. While squash is cooking, heat a large skillet over medium heat. Add about 2 Tbsp coconut oil, then add onion and cook for 3 mins, or until translucent.
  4. Add ground turkey and cook until fully cooked. Then, add remaining ingredients and cook an additional 10 minutes.
  5. Once squash is done, flip over so the open face is up, then stuff with turkey mixture. You can put these back in the over on broil for 2-3 minutes if you would like the top to be crispy.
  6. Enjoy!
