Stuffed Delicata Squash
This Stuffed Delicata Squash is one of my favorite Fall dinners. A warm comfort meal that is filling and flavorful - it doesn’t get much better than that!
Ingredients
- Coconut oil, as needed
- 2 medium delicata squash
- 1 medium yellow onion, diced
- 1 lb ground turkey
- 16 oz bag frozen cauliflower rice
- 2 cloves minced garlic
- 1 Tbsp fresh rosemary, chopped
- ½ tsp salt
Instructions
- Preheat oven to 400°F and grease a cookie sheet, or line with parchment paper.
- Slice delicata squash lengthwise, scoop out seeds, and coat inside with coconut oil. Place face down on cookie sheet and bake for 30 minutes, or until a fork can poke through them easily.
- While squash is cooking, heat a large skillet over medium heat. Add about 2 Tbsp coconut oil, then add onion and cook for 3 mins, or until translucent.
- Add ground turkey and cook until fully cooked. Then, add remaining ingredients and cook an additional 10 minutes.
- Once squash is done, flip over so the open face is up, then stuff with turkey mixture. You can put these back in the over on broil for 2-3 minutes if you would like the top to be crispy.
