No Bake Chocolate Oat Cookies
These No Bake Chocolate Oat Cookies taste like my childhood. The best part? They’re a gluten free, dairy free, refined sugar free, and vegan version of my favorite after school treat!
Ingredients
- ¾ cup softened coconut oil
- ¾ cup coconut sugar
- 3 Tbsp cacao powder
- 1 tsp vanilla extract
- 1 Tbsp water
- 2 cups gluten free old fashioned oats
Instructions
- In a large bowl, thoroughly combine all ingredients.
- Roll into bite-sized balls and place on a parchment-lined tray. Then, place in fridge to set for at least 30 minutes.
- Enjoy!

I used to whip these up alllll the time after school. Easy, delicious, and drool-worthy. They will for sure become a new staple treat recipe in your household! They're extremely simple to make and are soooo addicting.
