Paleo Chocolate Chip Cookies
These Paleo Chocolate Chip Cookies are high on the favorites list in our house. A soft texture with a pop of chocolaty sweetness in every bite.
Ingredients
- 3 flax eggs (3 Tbsp ground flax seeds & 6 Tbsp water; let sit for 3 minutes)
- 2 ¾ cups almond flour
- 1 cup tapioca flour
- ½ cup maple syrup
- 2 Tbsp melted coconut oil
- 1 tsp baking soda
- ½ tsp pure vanilla extract
- ¼ tsp salt
- ¾ cup chocolate chips
Instructions
- Preheat oven to 350°F and grease a cookie sheet, or line with parchment paper.
- In a medium bowl, thoroughly mix together all ingredients, except chocolate chips.
- Fold in chocolate chips and place in fridge to chill for 15 minutes.
- Once chilled, scoop with large cookie scoop onto cookie sheet. Press to flatten cookies to ensure they cook evenly.
- Bake for 20-25 minutes.
