Italian Meatballs

Having easy & protein-filled lunches is extremely important when it comes to eating healthy. I love making these Italian Meatballs ahead of time, storing them in the freezer, and popping a few in the microwave to have with my lunches.

Ingredients

  • 1 small yellow onion, finely chopped
  • ¼ cup green onions, finely chopped
  • 4 Tbsp olive oil
  • 1 Tbsp coconut flour
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried parsley
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • 1 lb ground beef

Instructions

  1. Preheat oven to 450°F and grease a cookie sheet or line with parchment paper.
  2. In a large bowl, combine all ingredients and thoroughly mix together.
  3. Use a small cookie scoop to scoop the mixture into balls and place on cookie sheet.
  4. Bake for 15 minutes and enjoy!

Notes

I always thought homemade meatballs were complicated and would take too much time to prepare, but these are actually very simple!
