Pecan Date Cookies

These Pecan Date Cookies take almost no time to whip up, and taste amazing!

Ingredients

  • 1 ½ cups almond flour
  • ½ cup tapioca flour
  • ¼ cup maple syrup
  • 1 egg
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • ¼ cup chopped pitted dates
  • ¼ cup chopped pecans

Instructions

  1. Preheat oven to 350°F and grease a cookie sheet or line with parchment paper.
  2. In a medium bowl, thoroughly mix together all ingredients, except dates and pecans.
  3. Fold in dates and pecans and scoop with a small cookie scoop onto the cookie sheet.
  4. Bake for 15-18 minutes, or until golden.
  5. Enjoy!

The perfect addition to a warm cup of coffee or hot chocolate during this cold winter. Paleo, gluten-free, dairy-free, refined sugar-free, soy-free.
