Cranberry Orange Bread
A soft and flavorful consistency, topped with an orange-flavored icing...yum!!
Ingredients
Cranberry Orange Bread:
- 2 chia eggs (2 Tbsp ground chia seeds + 6 Tbsp water; let sit 3 mins)
- 2/3 cup coconut flour
- 1/3 cup tapioca flour
- 1/3 cup almond flour
- 1 tsp baking soda
- ¼ tsp salt
- ¼ tsp cinnamon
- ½ cup freshly squeezed orange juice
- ½ cup maple syrup
- ¼ cup melted coconut oil
- ½ tsp vanilla
- Zest of one orange
- ¾ cup fresh cranberries
Orange Icing:
- ½ cup maple sugar
- 4 tsp freshly squeezed orange juice
Instructions
- Preheat oven to 350°F and grease a 9x5 inch baking dish, or line with parchment paper.
- In a small bowl, mix chia seeds and water together. Set aside for 2-3 minutes to create a chia egg.
- In a large bowl, combine all remaining ingredients, except cranberries.
- Once thoroughly mixed together, add in chia egg and mix well.
- Fold in cranberries and pour into loaf pan.
- Bake for 45-50 minutes, or until a toothpick comes out clean. Let cool completely before adding icing.
- Once bread is cool, whisk icing ingredients together. Pour over bread, slice, and enjoy!
