Chocolate Coconut Truffles
These Chocolate Coconut Truffles are a fun, chocolaty treat that will satisfy your sweet tooth and provide you with some mid-afternoon fuel.
Ingredients
- 1 cup pitted dates
- ¾ cup pecans
- ½ cup cacao powder
- ½ cup shredded unsweetened coconut
- ¼ cup Collagen Multi Collagen Peptides
- 1 Tbsp water
- ¼ tsp salt
- 1 ½ cups chocolate chips, melted
Instructions
- Add all ingredients except melted chocolate chips into a food processor and process until fully blended. If too crumbly, add up to 1 additional Tbsp of water.
- Roll mixture into tablespoon sized balls and place in fridge for 5 mins.
- Coat in melted chocolate and place on a tray lined with parchment paper. If desired, sprinkle with shredded coconut.
- Let harden in fridge and enjoy! Best stored in the fridge.
