Chocolate Coconut Truffles

These Chocolate Coconut Truffles are a fun, chocolaty treat that will satisfy your sweet tooth and provide you with some mid-afternoon fuel.

Ingredients

  • 1 cup pitted dates
  • ¾ cup pecans
  • ½ cup cacao powder
  • ½ cup shredded unsweetened coconut
  • ¼ cup Collagen Multi Collagen Peptides
  • 1 Tbsp water
  • ¼ tsp salt
  • 1 ½ cups chocolate chips, melted

Instructions

  1. Add all ingredients except melted chocolate chips into a food processor and process until fully blended. If too crumbly, add up to 1 additional Tbsp of water.
  2. Roll mixture into tablespoon sized balls and place in fridge for 5 mins.
  3. Coat in melted chocolate and place on a tray lined with parchment paper. If desired, sprinkle with shredded coconut.
  4. Let harden in fridge and enjoy! Best stored in the fridge.

They are filled with healthy fats, along with extra protein from the collagen; what could be better?!
