Paleo & AIP Salted Caramel Bars
Who doesn’t love salted caramel everything??
Ingredients
Shortbread:
- ¾ cup coconut flour
- ½ cup melted coconut oil
- 4 Tbsp maple syrup
- 1/8 tsp salt
Caramel:
- 1 cup pitted dates, soaked in boiling water for 5 mins
- ½ cup coconut milk
- 1/8 tsp salt
Instructions
- Preheat oven to 350°F and line a 5x9 inch pan with parchment paper.
- In a medium bowl, mix shortbread ingredients together. Press into the bottom of your pan and bake for 10 minutes.
- While shortbread bakes, add all caramel ingredients into a food processor and process until smooth. Scoop caramel mixture into a small saucepan and stir over low heat for 8 minutes.
- Spread caramel over baked shortbread and place in the freezer to set.
- Enjoy! Store in the freezer.
