Paleo & AIP Salted Caramel Bars

Who doesn’t love salted caramel everything??

Ingredients

Shortbread:
  • ¾ cup coconut flour
  • ½ cup melted coconut oil
  • 4 Tbsp maple syrup
  • 1/8 tsp salt
Caramel:
  • 1 cup pitted dates, soaked in boiling water for 5 mins
  • ½ cup coconut milk
  • 1/8 tsp salt

Instructions

  1. Preheat oven to 350°F and line a 5x9 inch pan with parchment paper.
  2. In a medium bowl, mix shortbread ingredients together. Press into the bottom of your pan and bake for 10 minutes.
  3. While shortbread bakes, add all caramel ingredients into a food processor and process until smooth. Scoop caramel mixture into a small saucepan and stir over low heat for 8 minutes.
  4. Spread caramel over baked shortbread and place in the freezer to set.
  5. Enjoy! Store in the freezer.
